I've seen some images of the GOES-16 Day Convection RGB and the satellite liaison mentioned that the data is available for the Full Disk data. Here is a loop from this afternoons convection.

While the resolution is poor, you can still see the strongest areas of convection where the overshooting tops occur (bright yellow). I think this RGB will be much more useful than the Day Land Cloud Convection RGB, which doesn't seem to provide much value over the traditional Visible-Red imagery. It can be a good situational awareness tool that will allow you to quickly focus on the strongest storms.
